Ingredients:
- 1 pound of boneless chicken breasts
- 1 tablespoon of olive oil
- 1 teaspoon of ground cumin
- 1 teaspoon of smoked paprika
- 1 teaspoon of chili powder
- 1 teaspoon of garlic powder
- Salt and pepper to taste
- 1 cup of cooked white rice
- 1 cup of black beans, drained and rinsed
- 1 cup of diced tomatoes
- 1 cup of diced red onions
- 1 cup of diced fresh pineapple
- 1 cup of chopped cilantro
- 1 lime, cut into wedges
- 8 small flour tortillas
Instructions:
1. Preheat your oven to 375°F (190°C).
2. In a bowl, combine the olive oil, cumin, smoked paprika, chili powder, garlic powder, salt, and pepper. Mix well to create a marinade.
3. Place the chicken breasts in a resealable bag and pour the marinade over them. Seal the bag and massage it gently to ensure the chicken is evenly coated with the marinade. Allow the chicken to marinate for at least 30 minutes.
4. Place the marinated chicken on a baking sheet and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and lightly browned. Be sure to turn the chicken halfway through cooking.
5. Once cooked, remove the chicken from the oven and let it rest for a few minutes. Then, slice it into thin strips.
6. In a small saucepan, warm the black beans over medium-low heat. Add a pinch of salt and pepper to taste.
7. Heat the flour tortillas in a dry skillet or on a grill, just until they become pliable.
8. Assemble the tacos: Place a spoonful of cooked rice onto each tortilla, followed by a layer of black beans. Top with chicken slices, diced tomatoes, red onions, fresh pineapple, and chopped cilantro.
9. Serve the tacos garnished with lime wedges on the side, so your guests can squeeze fresh lime juice over their tacos.
