How to Make Delicious Edikang Ikong Soup


Edikang Ikong soup is a delicious Nigerian soup that's easy to make and full of flavor. Here’s how you can prepare it at home:

Ingredients: 

-2 tablespoons vegetable oil 

-3 large onions, minced finely 

-4 cloves garlic, minced  

-1 small habanero pepper (or other standard hot pepper), seeds removed and diced 

-2 pounds beef chuck steak or stewing meat, cut into 1 inch cubes 

-6 cups water 

-5 medium tomatoes, chopped roughly

-1 cup washed green vegetables such as spinach leaves, Ugu(pumpkin)leaves or bitterleaf 

- ¼ cup dry fish (smoked fresh herring available in African stores)

 - 2 seasoning cubes

– 3 corms crayfish pounded

- Salt and ground black peppers to taste          

 Instructions :        

 1. Heat the palm oil in a pot over moderate heat until hot but not smoking. Add onions and stir until softened. 

 2. Add tomatoes and peppers then continue stirring frequently to avoid burning them at the bottom of the pot with constant adjustments from low to high heat settings accordingly . 

 3. After about 8 minutes add spinach/leafy vegetables along with all remaining seasoning ingredients plus prawns.(excluding salt.) Allow simmered stewed mixture cook under low-medium heat for 7 minutes then carefully stir every now while increasing heat setting actively when needed.   

 simmer for 15 mins or longer depending on your preferred thickness consistency making sure there's enough liquid during this time. Adjust stove knob temperature variations throughout entire duration while adding small amounts additional hot boiling water just short increments right before done cooking another 10mins so total estimated well cooked overall serving accepted 30minutes mark completely finished successfully prepared finally ready serve everybody.
